This August, try Assam iced! It has long been one of the most traditionally served varieties of iced tea, and for good reason.
To make it by the glass:Heat 6 oz of water to a rolling boil. Meanwhile, pack a 12+ oz glass
full of ice. Add 2 tbsp loose Assam leaves to hot water, and allow to
steep for 3-5 minutes. Then, slowly strain tea leaves from liquid,
pouring the tea very slowly over your cup of ice. Top with additional
ice if desired, add a slice of lemon, and enjoy!
